I found this recipe on a website and it had 2,397 positive reviews, so I had to try it. It was such a good dish that we didn't have enough for 2 leftover dishes for tomorrow! Definitely a must try!
Ingredients:
- 2-3 boneless chicken breasts, cut into bite-size pieces
- 1-2 Tbsp olive oil
- Optional Veggies (I used green onions and red peppers. Mushrooms and broccoli would also be good choices)
- 2 Garlic cloves
- 1/4 tsp ginger
- 3/4 tsp crushed red pepper flakes
- 1/4 cup apple juice
- 1/4 cup light brown sugar
- 2 Tbsp ketchup
- 1 Tbsp cider vinegar (I used white vinegar since it was all I had)
- 1/2 cup water
- 1/3 cup soy sauce
Directions
- Heat oil in skillet and add chicken pieces.
- If using veggies, add these after a few minutes of cooking the chicken.
- Cook until lightly golden
- Remove chicken mixture to a plate
- Add remaining ingredients to pan and heat over medium heat until mixed and dissolved
- Add chicken mixture back to sauce and bring to a boil
- Reduce to heat and simmer for 20 minutes
- Serve over hot rice
- Garnish with green onions (optional)
