Bourbon Chicken

I found this recipe on a website and it had 2,397 positive reviews, so I had to try it. It was such a good dish that we didn't have enough for 2 leftover dishes for tomorrow! Definitely a must try!

Ingredients:
  • 2-3 boneless chicken breasts, cut into bite-size pieces
  • 1-2 Tbsp olive oil
  • Optional Veggies (I used green onions and red peppers. Mushrooms and broccoli would also be good choices)
  • 2 Garlic cloves
  • 1/4 tsp ginger
  • 3/4 tsp crushed red pepper flakes
  • 1/4 cup apple juice
  • 1/4 cup light brown sugar
  • 2 Tbsp ketchup
  • 1 Tbsp cider vinegar (I used white vinegar since it was all I had)
  • 1/2 cup water
  • 1/3 cup soy sauce
Directions
  1. Heat oil in skillet and add chicken pieces.
  2. If using veggies, add these after a few minutes of  cooking the chicken.
  3. Cook until lightly golden
  4. Remove chicken mixture to a plate
  5. Add remaining ingredients to pan and heat over medium heat until mixed and dissolved
  6. Add chicken mixture back to sauce and bring to a boil
  7. Reduce to heat and simmer for 20 minutes
  8. Serve over hot rice 
  9. Garnish with green onions (optional)
